Stop using APPLE_SDK_VERSION_OVERRIDE to set SDKROOT There has not been a need for sdk version override in years. For all the relevant Xcodes, each platform only has one SDK whose directory name is `<platform>.sdk`, and `<platform><default sdk version>.sdk` links to that.
